What I messed up:
It was Bharat bandh (in some parts of the country ;)) as a mark to protest the steep hike in fuel prices. Along with Bharat bandh, there was also the Office-bandh. Ofcourse we are compensating the forced holiday by working on Saturday :’(
What did I do the whole day? Cooked a decent lunch JJ, visited the temple, completed a ppt.
Did you ask what was for lunch? Yummy sambar with drumsticks, baby onions & potatoes with steaming rice!!
Left without a choice, there was nothing on TV to watch, neither any interesting stuff to browse on the net that caught my attention, I decided to try my hand at baking cupcakes. Yet again, I have to thank Anu for gifting me a wonderful book on cupcakes “Cupcake Magic by Shirazi”. There is variation from the recipe mentioned in the book as the percentage completion of recipe adherence was almost 90% (Quality & terms!!! This is what years of being a SQA does to you ;)).
Here’s the recipe.
Here's what you need:
1 & 1/4 cups Maida
2/3 cup Sugar
1 tsp Baking Powder
1/3 cup Tutty Fruity
½ cup Margarine
2 eggs
1 tsp vanilla essence
- Preheat oven to 180°C. Ready your muffin tray by lining it up with paper muffin cups.
- Sieve the maida and baking powder in a large bowl. Mix tutty fruity.
- Beat the eggs. Add the margarine, vanilla essence & sugar into the mixture and beat until it turns fluffy. Slowly add maida into the bowl & mix well until the batter is of the right consistency.
- Pour the batter into the prepared muffin cups. Do not fill the batter upto the rim, just a little more than ½ cup should suffice.
- Bake the batter at 180°C for 20-25 minutes or until you see a golden-brown crust.
What I messed up:
- I should have prepared muffin tray. Simultaneously, preheated the oven
- I just added the egg without beating it first. The cupcakes smelt slightly of raw egg.
- I powdered the sugar before using it in the recipe. The cake didn't turn brown the way a cake should :)
- Add demerara sugar to get the wonderful golden-brown colour. It also gives a crunchy taste to the cupcakes.
